Blender Banana Protein Muffins

Ingredients

Wet:

  • 3 overripe bananas
  • 2 eggs
  • 1/3 cup peanut butter
  • 2 tbsp extra virgin olive oil
  • 1 tsp vanilla
  • 1/4 cup honey or maple syrup


Dry:

  • 1/3 cup WelleCo Nourishing Protein in Vanilla
  • 1 + 1/3 cup almond flour 
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Pinch of salt

 

Method

  1. Add the wet ingredients to a blender until just blended. Add the dry ingredients and blend one more time until just combined.
  2. Pour the mixture into lined muffin tins and bake in the oven for 20-22 minutes on 180*C or until just set. 
  3. Serve with extra peanut butter and a cup of tea for the perfect snack.
